Fish in my area has been great. I had Captain Shawn Neurath from Mission Fishin Charters out of Spring Hill on the boat with me the other day in Tarpon Springs fishing the Anclote River. Only a few hours on the water produced many redfish, trout sheepshead and a few flounder. Shrimp on a Matzuo sickle jig head is my favorite presentation, but I switched to shrimp on a 1/0 Owner circle hook to target the sheepshead. 25 lb leader was strong enough to keep in good shape with the rocky but thin enough to keep the bites flowing. When I'm not around rocky bottom, or if the water is clear, I'll sometimes go down to a 15lb leader. Captain Shawn worked primarily DOA soft plastics, and produced very nice fish as well.

A few of the large (18 inch) sheepshead were kept for dinner, and fiddler crabs and shrimp were found in the stomachs. other good bait to use if targeting sheepshead and flounder are barnacles and green oysters. These can be scraped off of pilings with a paint scraper into a bucket, then smashed, using the meat for bait, and the leftovers for chum.
