Heres my 2 cents,I travel the flea markets quite a bit and quite often I find people selling resharpened knives fron the meat shops, some are flexable and some are on the stiff side, i use the stiff ones for the filet and the flexible ones for the skinning , and the best part they are only 3.00 each or 2 for 5.00, they come razor sharp and hold a edge
