The first thing to do is to carefully vent the fish with a good ventint tool. The tool should meet all Federal and State law requirements.

Our Personal Favorite Venting Tool is this one from Ohero (the Vent-for-Life) but there are a few hear that we know will work too.
To deflate the gases inside the Amberjack's gut, you will place the venting needle on a 45-degree angle approximately 1-to-2 inches behind the base of the pectoral fin. Insert the needle only enough to release the gases. The sound of the gas escaping is audible and deflation is noticeable.
