Mackerel with Orange Sauce
- 10 Oz. mackerel, filleted with skin on
- 1-2 tsp hot sauce (to taste)
- 1 small orange, juice and grated zest
- 1 bunch coriander, very roughly sliced
- 2 oz. pine nuts, toasted
- 1/2 tsp smoked paparika
- 2 tsp plain flour
- 2 tbsp extra virgin olive oil

Sift flour with smoked paparika
Roll the mackerel fillets in the sifted flour mixture
Shake off excess flour and set the fish aside in a single layer.
To make the glaze, whisk together 1 tbsp olive oil, the orange zest and juice, and the hot sauce into a small bowl.
Heat remaining olive oil in a frying pan until very hot but not smoking.
Fry the fish fillets for 5 minutes on the skin side; flip, then fry 5 minutes on the flesh side.
When the fish is nearly cooked (it should looked firm), cover the fillets with the spicy orange glaze; bring to a boil and allow the liquid to bubble until sticky.
Sprinkle with pine nuts and coriander and serve.
