Whole Baked Pompano

You can catch pompano at most bridges, on flats, and in the surf. Learn to bake them whole and easily.

We are limiting the number of recipes we run on the site, so we try to find ones that are simple, delicious, and applicable to fish we catch locally. You can catch these incredible crab-eaters near most area bridges on hermit crabs. Try scraping the barnacles off a few inches of bridge pilings and watching the tide take the stream. Drop your baits right alongside the structure and wait for tiny taps. They are not easy to catch, but worth learning how to do it. Old timers say you have to set the hook just before they bite the bait.
